[interviewee 1] In the last 20 or 30 years, a small handful of people changed how we look at food.

[interviewee 2] It's not if someone's gonna learn to cook or love food, it's when.

[interviewee 1] "This is the greatest cuisine in the world. And if I have to hand-feed it to you and watch you react, then I'll do that."

[interviewee 3] Alice Waters is the mother of the farm-to-table movement. It's her uncompromising way that pushes us to do things we didn't think were possible.

[Alice Waters] A place where we treasure our farmers. That's the world I wanna live in.

[interviewee 4] Thomas Keller has led the way for several decades now. He is the most important American chef in history.

[Thomas Keller] When somebody tells you you have influenced them, that's why I do what I do.

[interviewee 5] Jamie Oliver. Bestselling author. Charming TV chef. He's changed the way people think about food in this country.

[Jamie Oliver] I have a job to guide as many people towards the joy of food and cooking, and I'm gonna give it my best shot.

[interviewee 1] José is a maximalist. On one side, you have a small empire of incredible restaurants, and the other side, you have a nonprofit organization wanting to feed the world.

[José Andrés] There is a moment I realized that, if you give people the spark of possibility, that spark becomes a big flame of hope.
